This is a simple way to add some veggies to your breakfast. I use Pam spray to keep the eggs from sticking to the pan and to avoid all the fat.

Recipe Ingredients for Egg & Veggie Toss

2 cup Spinach
2 large Egg, White
1 serving Pictsweet 3 Pepper
0.1 oz Cayenne Pepper

Recipe Directions for Egg & Veggie Toss

  1. Heat pan to medium heat.

  2. Spray pan with Pam to avoid egg sticking or burning to bottom of pan.

  3. Separate Egg whites from eggs in a bowl (save yolks in container for later use or dispose of egg yolks).

  4. Add frozen Pepper & Onion blend to pan and saute until heated through.

  5. At this point you can add the spinach or wait until after egg whites are added.

  6. Toss in egg whites and while eggs still have some liquid, toss in spinach.

  7. Scramble and toss all together until egg whites have cooked completely and spinach and other veggies are thoroughly mixed in with egg whites.

  8. Salt and Pepper to taste, if you feel you need it.

  9. Remember, you can add al sorts of other veggies to make this a vitamin and Fiber filled meal.

  10. I like to add Asparagus and tomatoes too.
