Adapted from Vegetarian Times. I used tiny purple potatoes and a few little red ones. Used orange cauliflower and added heirloom cherry tomatoes for a very colorful salad! Recipe called for white balsamic vinegar, I didn't have any so used champagne vinegar.

Recipe Ingredients for Egg & Veggie Salad

4 large Egg, Whole
12 potato small (1-3/4" to 2-1/4" dia) Potatoes, Red, Flesh And Skin
1 cup Cauliflower
1.5 cup slices Cucumber
1 cup Organic Cherry Tomatoes
6 oz No Fat Plain Greek Yogurt
5 large (1" to 1-1/4" dia) Radishes
1.5 1tsp Olive Oil
1 tbsp Vinegar red wine
0.5 cup sprigs Dill Weed, Fresh

Recipe Directions for Egg & Veggie Salad

  1. Set steamer in pot over boiling water. Place eggs on rack, surround with potatoes. Steam 10 minutes, add cauliflower florets, steam for 3 or 4 minutes until veggies are just tender and eggs are hard cooked.

  2. Cut a 1-inch piece from 1 Persian cucumber, put into blender with 1/3 c dill, 1/4 c yogurt, a little olive oil and vinegar. Puree until smooth. Place remaining 1/2 c yogurt in a bowl, stir in the pureed ingredients. Set aside.

  3. Slice remaining cucumbers on diagonal.

  4. Peel eggs under cold running water, and quarter them.

  5. Put potato veggie mixture in bowl or on plates, top with tomatoes, eggs, radishes and cucumbers.

  6. Drizzle with dressing, sprinkle with a little chopped dill.
