Recipe Ingredients for Egg and Vegetable Strata

6 serving Double Fiber
8 oz 2% Milk Reduced Fat Mild Cheddar
3 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 medium (4-1/8" long) Onions, Spring Or Scallions
2 cup Milk, Lowfat, Fluid, 1% Milkfat
10 large Egg, White
1 cup, pieces or slices Mushrooms

Recipe Directions for Egg and Vegetable Strata

  1. Spray a rectangular casserole dish with non-stick cooking spray.

  2. Line the bottom of the dish with bread slices.

  3. Layer the mushrooms and tomatoes over the bread.

  4. In a large bowl, whisk remaining ingredients.

  5. Pour egg mixture over bread.

  6. Cover and refrigerate 3-8 hours.

  7. Uncover and bake at 350 for 45 minutes or until set.
