Quick and satisfying fried rice with diced veggies, egg and chicken stock. Since you need to work quickly when cooking this dish, so have everything ready and within reach.

Recipe Ingredients for Egg and Veg Fried Rice

1 tsp canola oil
1 clove garlic
3 g ginger, finely chopped
130 g carrots, chopped
100 g egg
100 g frozen green beans, chopped
850 g jasmine rice, cooked
2 cube Chicken Flavor Bouillon
100 g canned corn, drained
1/4 tsp sesame oil

Recipe Directions for Egg and Veg Fried Rice

  1. Cook rice with a whole clove of garlic. Cool by spreading out in a frying pan.

  2. Remove & chop garlic clove. Heat oil in a deep frying pan or a wok and stir-fry garlic, ginger, beans and carrots till just beginning to soften. Lower heat.

  3. In a bowl, beat eggs very lightly (just to break up the yolk) with 1-2 tbsp water. Add to pan/wok. Allow to cook slightly then scramble.

  4. Wash hands and with wet hands break up rice to separate grains. Add rice to the pan/wok. Crush stock cubes over rice and stir to incorporate well. Cook to heat through.

  5. Add in corn. Stir well. Remove from heat. Stir in sesame oil.

  6. Serve.
