Tomatoe and Carrot Cous Cous Salad

Recipe Ingredients for Egg tomatoe and carrot cous cous

2 cups cous cous
1 pint cherry tomatoes
9 1/2 ounces carrots
10 hard boiled eggs
1/2 cup chopped almonds
1 tbsp olive oil

Recipe Directions for Egg tomatoe and carrot cous cous

  1. Hard boil 10 eggs and set aside

  2. Cook 2 cups of Cous Cous then add 1 tbsp of olive oil and stir

  3. In large tuppeware mix together cous cous, slices eggs, 1 bag of matchstick carrots, 2 pints of cherry tomatoes and 1/2 cup chopped almonds.

  4. For a lower fat version remove egg yolks.
