Fried egg with tomato, onions and celery, served over a bed of rice

Recipe Ingredients for Egg, Tomato, Rice

1 1/2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 large(46 g) Egg, Whole
1/2 medium raw Onion Red
1 stalk, medium (7-1/2" - 8" long) Celery
1 Cube Chicken Stock Cubes
1 cup Rice, White, Long-grain, Regular, Cooked
1 tbsp chopped Onions, Spring Or Scallions
1 tbsp Vegetable Oil, Canola
2 clove Garlic

Recipe Directions for Egg, Tomato, Rice

  1. Heat the Oil

  2. Fry the egg in the oil

  3. Take the egg out of the pan and fry the tomato, celery, garlic, and red onion.

  4. Return the egg to the pan and fry everything together

  5. If you heat it for too long, it will turn into a soupy mush which is fine, but not very pretty.

  6. Serve over a bed of rice, if not vegetarian, cooked with chicken stock.
