Hard boiled eggs halved inside a lemon pickled roma tomato wrapped in a lettuce leaf and sprinkled with pepper and a spritz of key lime juice. Pinch of salt opt.

1 medium raw Tomato Roma
1 large Egg, Whole
2 leaf Lettuce, Iceberg
1 lime Key Lime

Recipe Directions for Egg-tomato lettuce wrap

Squeeze limes (the recipe says just one for calorie sake, but in reality you won't be eating the lemon(s) just a splash of the juice) into a shallow container. Halve a tomato cleaning out insides and sit in juice. Some salt is opt. Fill the cavity with juice also. Allow minimum 20-30 mins for pickling depending on tartness of limes and how much of the flavour you want. Place half a boiled egg into the cavity and sprinkle with some of the lemon juice marinade, some pepper and opt. salt to taste. Wrap in a crisp green lettuce leaf and savor the lemony freshness!
