credit goes to: http://www.foodnetwork.ca/recipes/Rice/Grain/recipe.html?dishid=8719 This was a life-saver (literally?) as it has allowed us to keep baking at home, in spite of the boyfriend's extreme allergy to eggs and anything derived from them. The exact portioning is unimportant - I usually pour the prepared good in to an ice cube tray and freeze it for easy, accessable storage. 1 "ice cube" can conveniently be used in place of one egg, but I've also read and used 1 tbsp while it's still liquid, and neither measure has had ill result.

0.33 cup Flaxseed
3 cup (8 fl oz) Water

In a saucepan, bring the water and flax seeds to a boil. Reduce the heat and simmer for 30 minutes. Strain immediately, collecting the goopy liquid and separating it from the seeds. Let cool slightly, then refrigerate until lukewarm.
