Summer vegetables scrammbled with Eggs

Recipe Ingredients for Egg Scramble Primavera

2 small Squash, Summer, All Varieties
1/2 tomato Tomatoes, Red, Ripe
1 1/2 cup chopped Food You Feel Good About Potato Medley
4 large Egg, Whole
1 tbsp Olive Oil
2 oz Cheddar Cheese
1/2 medium (2-1/2" dia) Onions
0.66 cup, chopped Peppers, Sweet, Green
1 pepper Peppers, Jalapeno
2 pepper Pepper, Serrano

Recipe Directions for Egg Scramble Primavera

Saute Onions, potatoes and peppers until soft, add squash and tomato saute until just barely soft. Beat eggs add to mixture. Cook until just barely firm. Top with grated cheese, cover and cook until the cheese is melted
