Recipe Ingredients for Egg & Sausage Breakfast Casserole - Healthier Version

7 oz. Pork Sausage
2 1/2 cups egg substitute
3 cups skim milk
2 teaspoons dry mustard
1 teaspoon salt
6 slices whole wheat bread, cubed
2 cups shredded light Cheddar cheese
1/2 teaspoon black pepper
1/2 cup sliced mushrooms
1 medium tomato, seeded and chopped
1/2 cup green onions

Recipe Directions for Egg & Sausage Breakfast Casserole - Healthier Version

  1. Preheat oven to 325 degrees.

  2. Brown sausage in skillet over medium heat, breaking into small pieces. Once cooked, drain off excess fat and rinse sausage to remove additional fat.

  3. In a large bowl, add egg substitute, skim milk, dry mustard and salt. Mix together. Set aside.

  4. In a greased 13X10X2 pan, layer 1/2 of each of the following: whole wheat bread, cheese, pepper, mushrooms, tomato, and green onions. Do this twice.

  5. Pour egg mixture over the top of the previously layered items. Then, take spatula and push down all ingredients so that they get saturated by the egg mixture.

  6. Bake in oven for 55-60 minutes.

  7. Can serve immediately.
