Recipe Ingredients for Egg Sandwich Turnovers

1/2 cup scallions, diced
1 clove garlic, diced
1/2 cup bell pepper, diced
1 tbsp olive oil
1/2 cup egg beaters
6 egg whites
1/2 tsp ground black pepper
1/8 tsp dried thyme
1/4 tsp dried parsley
1/4 cup flour
16 oz pizza dough
6 oz swiss cheese
6 oz lean ham

Recipe Directions for Egg Sandwich Turnovers

  1. Preheat oven to 400 degrees.

  2. In a medium skillet, saute garlic, scallions, and bell pepper in 1 tsp olive oil for 5 minutes over medium-high heat. While sautee-ing, whisk together eggs, egg whites, pepper, thyme, and parsley in a bowl. Pour egg mixture into skillet. Scramble with vegetables for about 3-5 minutes or until eggs are set and fluffy. Take off heat and let cool.

  3. Dust a work surface and rolling pin with your flour. Kneed dough until it is in a tube like shape, about 6" long. Divide dough into 6 sections (about 1" each) by cutting with a knife. Roll out each section into a circle and place circles onto a foil-lines baking sheet.

  4. To assemble, layer the following ingredients: on each circle of dough place 1/2 slice of cheese, 1/3 cup of egg mixture, 1 oz of ham and top with the other 1/2 slice of cheese. Fold dough over to make a half-moon shape. Pinch the sides together with water to stick. Brush outer dough with remaining oil.

  5. Bake 20-25 minutes or until the dough is golden and feels crusty to the touch. Let cool for 5 minutes before transferring to another container so that the dough and mixture can set.
