Recipe Ingredients for Egg Salad Sandwiches

2 eggs, hard-boiled
3 egg whites, hard-boiled
1 green onion, chopped (more or less to taste)
1/8 cup sweet red pepper, finely chopped (more or less to taste)
1 tbsp light mayonnaise (I use Hellmann's mayonnaise, with olive oil)
1 tbsp fat free sour cream
1/8 cup carrot, grated (more or less to taste)
8 slices italian bread
1 tbsp relish, green

Recipe Directions for Egg Salad Sandwiches

  1. mix first 7 ingredients together

  2. spread on 4 slices of bread

  3. top with remaining 4 slices of bread
