Recipe Ingredients for egg salad sandwiches

4 eggs, hard-cooked, chopped
2 tbsp green onion, finely chopped
2 tbsp light miracle whip
1 tbsp mustard
4 slices wheat bread, reduced fat
1/4 cup shredded monterey jack cheese
1 cup alfalfa sprouts

Recipe Directions for egg salad sandwiches

  1. Toast bread.

  2. In a bowl combine chopped eggs and green onion.

  3. Stir in mayonnaise, mustard and cheese. Add salt and pepper to taste.

  4. Spread egg mixture on 2 slices of bread. Top with alfalfa sprouts.
