A lighter take on egg salad; no mayo.

Recipe Ingredients for Egg Salad

2 hard-boiled eggs
2 tablespoons finely chopped dill pickle
1 tablespoon fat-free sour cream
1 tablespoon finely chopped chives
1 teaspoon yellow mustard
1 dash of salt
1 pepper to taste

Recipe Directions for Egg Salad

  1. Mash hard-boiled eggs in small bowl with a fork.

  2. Add next 4 ingedrients; stir.

  3. Taste before adding salt and pepper.

  4. If too dry, add a splash of dill pickle juice to moisten.

  5. Serves 2
