Salad with fresh vegetables, egg, and bulgur.

Recipe Ingredients for Egg salad

2 large Egg, Whole
0.25 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.25 cup, chopped Peppers, Sweet, Red
40 grams Fat Free Yogurt Plain
0.25 medium raw Onion Red
1 carrot (7-1/2") Carrots
45 1/2 grams Bulgur, Cooked
0.75 cup, shredded or chopped Lettuce, Butterhead

Recipe Directions for Egg salad

  1. Cook or pre-soak bulgur.

  2. Hard boil two large eggs. Peel off shell and mash with a fork in a medium bowl. Add enough yogurt to moisten the egg.

  3. Cut desired quantity of vegetables and add to egg mixture.

  4. Add bulgur and lettuce.

  5. Season to taste.
