You can either put on top of shredded romaine or leave the leave whole and eat like a taco

Recipe Ingredients for Egg Salad & An Orange

3 egg whites
1 egg
2 t mayonnaise
2 t plain low fat yogurt
1 t mustard
1/4 c celery
2 T pickle relish
2 T green onion
3 c romaine lettuce
1 orange

Recipe Directions for Egg Salad & An Orange

  1. Place egg whites and egg in a microwave container, cook until firm. Remove from container, roughly chop and set aside to cool.

  2. In a small bowl combine mayonnaise, yogurt, mustard, chopped celery, pickle relish and chopped green onion. Stir until well mixed then add the egg mixture.

  3. Chop the romaine and top with the egg salad or leave the leaves whole and eat like a taco.

  4. Enjoy with an orange on the side.
