An egg mix for sandwiches or salads. Reduced cholesterol by discarding one of the cooked egg yokes and adding fat-free dressing to the mix instead of regular mayonnaise. Salt can be reduced further by NOT adding in the sprinkle of grated Parmesan cheese.

Recipe Ingredients for Egg Salad Mix

1 egg white, cooked, chopped
1 egg, whole, cooked, chopped
1 tsp Thousand Island Dressing, Walden's
1 tsp dill relish
1 tsp onion, diced
1/2 tsp Parmesan cheese, grated
1 Mrs. Dash seasoning mix, garlic and herbs

Recipe Directions for Egg Salad Mix

  1. Hard-boil eggs and allow to cool, then peel the eggs, cut in half, and discard one of the yokes entirely.

  2. Chop the egg into small pieces and then add in the other ingredients, mixing all together.

  3. Let stand (or refrigerate if not using right away) to let flavors blend.

  4. Spread on bread for sandwich or use in green salad for protein and texture.
