This is the low-fat version of my traditional egg salad recipe. I usually serve it on high fiber bread or some other dark bread. You can also serve it on celery sticks.

Recipe Ingredients for Egg Salad (Fiddle Version)

6 Hard Boiled Eggs
6 Egg Whites
1/4 cup hellman's reduced fat mayonnaise
2 teaspoon mustard
1/4 teaspoon kosher salt
1 freshly ground pepper to taste
1/4 teaspoon cayenne pepper, optional

Recipe Directions for Egg Salad (Fiddle Version)

  1. hard boil 12 eggs. discard yolks from 6 of them.

  2. mash everything up in a bowl with potato masher.

  3. use 1/3 of a cup for a sandwich size serving.
