Fresh egg rolls, recipe was given to me by a Chinese co-worker. My friend said they were the best she's ever had!

Recipe Ingredients for Egg rolls by Tarac

2 T canola oil
2 cloves garlic, finely chopped
3 green onions, sliced
1 large carrot, julienned
1 head cabbage, julienned
1 lb ham, sliced into thin strips
6 eggs
20 egg roll wrappers
1/4 cup canola oil

Recipe Directions for Egg rolls by Tarac

  1. Heat 2 T canola oil and sautee garlic and onion till softened. Add carrots and cabbage and sautee till carrots are cooked with a slight crunch. Add ham and cook till warmed through.

  2. Beat eggs, reserving a small amount to seal wrappers. With the remaining eggs, form small "pancakes" on non-stick pan and cook just till done. Cut into thin slices and add to carrot/cabbage/ham mixture. Let cool.

  3. Lay out egg roll skins and place mixture (about 1 T) into center of skin. Wrap tightly, enclosing sides. Brush a small amount of reserved egg on inside flap to seal.

  4. Spray or brush egg rolls with 1/4 C canola oil. Bake at 350 till cooked through and golden brown.
