Recipe Ingredients for egg rolls

20 egg roll wrappers
2 cups greens, shredded
1 carrot, grated
2 stalks celery, chopped finely
4 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon salt
1/2 teaspoon ginger
1 1/2 cups chickpeas
1 cup rice

Recipe Directions for egg rolls

  1. Chop greens finely (I used beet greens--you should use cabbage if you have it). Add salt to greens/cabbage and let sit 30 minutes. Then squeeze the water out.

  2. Mix drained greens with the ingredients (except the wrappers).

  3. Fill egg roll wrappers. Be sure to moisten the last flap before sealing it down.

  4. Bake at 350 for 20 minutes or so, until golden brown.
