For anyone desiring instant breakfast. This can be baked in advance and then individual servings heated in the microwave.

Recipe Ingredients for Egg, Potato & Salmon casserole

2 medium potatoes, chopped
1 medium onion, chopped
5 cloves garlic, chopped
1/2 cup reduced-fat cheddar cheese, grated
252 g pink salmon
10 eggs
3/4 cup skim milk

Recipe Directions for Egg, Potato & Salmon casserole

  1. Spread in a casserole dish chopped potatoes, onion and garlic.

  2. Bake at 375 degrees for 20 minutes

  3. Sprinkle cheese over hot potatoes

  4. Sprinkle chopped salmon

  5. In blender, whip eggs and milk and pinch of salt if desired. Pour over potato mixture.

  6. Bake 375 degrees for 27 to 30 minutes.
