eggs, hashbrowns and favorite veggies in a casserole pan.

Recipe Ingredients for egg potato casserole

12 eggs
22 oz. hash brown potatoes
1 pkg. frozen spinach
2 med. tomatos

Recipe Directions for egg potato casserole

crumble hashbrown patties into the pan and bake at 450 degrees for about 8 minutes or until slightly brown. Meanwhile mix eggs and any veggie you like, tomatos, mushrooms, onions etc together. When potatoes are brown pour egg mixture over them and bake again for approx. 15 minutes or until center is firm. This dish will rise somewhat, so leave a little room.
