Recipe Directions for EGG PLANT PARMESAN

  1. DICE TOMATOE, ONION AND GARLIC

  2. SAUTE ALL VEGGIES EXCEPT EGGPLANT IN OLIVE OIL

  3. APPROX 5-7 MINUTES ON STOVETOP

  4. SET ASIDE

  5. SLICE EGGPLANT ABOUT 3/4" THICK SLICES

  6. GRILL EGGPLANT ON MED HOT GRILL FOR ABOUT 6-7 MINUTES PER SIDE

  7. TOP WITH TOMATO MIXTURE ABOUT 3 MINUTES BEFORE SECOND SIDE IS DONE

  8. NOW ADD PARMESAN CHEESE ON TOP AND FINISH GRILLING UNTIL TENDER
