This is a marinara with a flavorful twist...It is a modification off the Rachel Ray one. I use mostly fresh product, with the exception of the dried spices (which can be substituted for fresh.) This wields two cups. It can be served over pasta or eaten alone.

Recipe Ingredients for Egg plant Marinara

2 tsp Garlic
2 tbsp chopped Onions
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
0.25 cup, pieces or slices Mushrooms
0.5 Medium Tomatoes
8 oz Tomato Sauce
1 tsp Parsley, Dried
2 tsp, leaves Basil, Dried
1/4 tsp Sea Salt
1/4 tsp Spices Ground Black Pepper

Recipe Directions for Egg plant Marinara

Heat oven to 425, slice egg plant on one side and place on oven rack for 20 minutes. once eggplant let cool and then peel skin. chop egglant into large pieces and then puree, heat pan/pot over medium heat. chop onion, mushroom, tomatoe, garlic, add 2 tbls spoons of Extra Virgin Olive Oil to pan, add garlic and onions and let cook till slightly brown, add tomato, add eggplant puree, add tomato sauce, basil, parsley, salt and pepper. let cook for 3 to 5 minutes for flavors to blend. Then serve over pasta or eat alone! Enjoy!
