3 tbsp Olive Oil
1 cup Bread Crumbs, Dry, Grated, Plain
1 eggplant, peeled (yield from 1-1/4 lb) Eggplant

Recipe Directions for Egg Plant Breaded and Fried (5 Servings)

  1. Peel Eggplant, slice lengthwise

  2. dip in egg beaten with 1 tbsp water, then coat with breadcrumbs

  3. heat 1//2 olive oil in non stick pan, fry till one side is golden brown. Add the remaining olive oil and repeat with the other side of eggplant slice.
