Recipe Ingredients for Egg Pancakes

2 eggs
1/4 cup half and half
2.05 oz Red Mill wholegrain pancake mix (1/2 cup)

Recipe Directions for Egg Pancakes

  1. Beat eggs and half & half together well. Stir in pancake mix until well blended.

  2. Heat a non-stick skillet over medium heat. Brush with safflower oil. Pour in batter, making a 6-inch pancake (about 1/4 cup batter).

  3. Turn when bubbles on top begin to break, and cook other side.

  4. Makes 5 pancakes. Make a stack and eat only half the stack. Serves 2.
