cross between an omlette and Swedish egg pancakes; fill with fruit, if desired

Recipe Ingredients for Egg Pancake

1/4 c whole wheat flour
3 large eggs
1 c 1% milk
1 tsp sugar
1 pinch salt
1/4 tsp vanilla
2 tsp butter

Recipe Directions for Egg Pancake

  1. Whisk together all ingredients except butter. Heat large nonstick pan over med high heat; add butter, melt and swirl to coat pan.

  2. Pour batter into hot pan, lower heat to med low. Cook like an omlet, gently lifting sides to allow liquid batter to slide under cooked part until no liquid batter remains. Fill as desired, fold over and cook another minute or two until fully set.
