I am not a big egg fan, but the mix of flavors in this omelette makes them super yummy! These eggs are a great start to a Saturday.

Recipe Ingredients for Egg Omelette - Super Awesome!

1/4 lb green pepper
3/10 lb red onion
1/4 lb sliced mushrooms
1 cup baby spinach
4 eggs
1/4 cup lowfat milk
2 tbsp barbecue sauce
1/2 tbsp Frank's RedHot
1/4 tsp chili powder
1/4 tsp cumin
1/2 tsp black pepper
1/2 tsp dried dill
4 oz shredded 2% cheddar cheese

Recipe Directions for Egg Omelette - Super Awesome!

  1. Chop the pepper and onion into 1/2" pieces.

  2. Fry the peppers and onions in a nonstick frying pan until they are browned and softened.

  3. Add the mushrooms and spinach and fry.

  4. While the vegetables are cooking, beat together the eggs, milk, condiments, and seasonings.

  5. Pour egg mix over the vegetables. Allow to cook until edges are solid.

  6. Flip egg (in sections if you must) and allow to cook on the other side. Cover if necessary.

  7. When the eggs are fully cooked, cover with the cheese. Cover pan and allow cheese to melt.

  8. Divide and serve - YUM!
