Recipe Ingredients for Egg Muffns

4 T margarine
8 eggs
1 oz wheat bread
1 c low-fat ricotta cheese
1/2 t salt
2 T parmesean cheese

Recipe Directions for Egg Muffns

  1. preheat oven to 350'. spray bottoms and sides of 8 standard muffins cups, place dot of butter in bottom of each and place in preheating oven to melt the butter. remove from oven, and divide bread crumbs among them.

  2. combine eggs ricotta salt in blender, whip until smooth. stire in black pepper

  3. pour egg mix into muffin cups., filling right up to the top. bake for 10 minutes. sprinkle each "muffin" with parmesean. bake for another 10 minutes until puffy, golden and just barely firm to the touch.

  4. remove from oven, let cool in pans for about 5 minutes. run knife around the edges, invert onto cooling rack.
