Recipe Ingredients for Egg Muffins

12 large Egg, Whole
1 cup Cheddar Shredded Cheese
1/2 cup pieces Mushrooms
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
3 medium (4-1/8" long) Onions, Spring Or Scallions
8 slices Turkey Breast
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
1 serving Double Acting Baking Powder

Recipe Directions for Egg Muffins

Spray a muffin pan with non-stick spray lightly. layer veggies, cheese, and turkey in bottom of muffin cups. Whisk eggs, salt, pepper, baking powder and pour over veggies, till cups are 3/4 full. Bake at 375 for 20 minutes. Let cool before removing. Can be frozen wrapped in tinfoil or parchment paper and put in a bag.
