Recipe Ingredients for egg muffins

12 large Egg, White
4 large Egg, Yolk
1 cup Spinach
0.25 cup Asparagus
0.5 cup, chopped Peppers, Sweet, Red

Recipe Directions for egg muffins

  1. In a pourable container or bowl, seperate 8 egg whites, then add 4 whole eggs.

  2. I use frozen chopped spinach, cook in microwave for 3 minutes, drain all water and set aside, add asparagus, pepper, onion, whatever else you have around and want to add.

  3. Place muffin papers in tin, fill about 1/2 way with veggie spinach mix, add a small sprinkle of shredded cheese. Pour egg mix over each

  4. cook 350 degrees for 20 minutes or until a knife/toothpick etc comes out clean.

  5. You can refrigerant or freeze. In am 2 muffins I zap for 45 second in microwave ans walah!
