South Beach Diet Egg Muffins - makes 12 muffins, 2 per serving. Great to make ahead then nuke in microwave for a healthy, on the go breakfast!

Recipe Ingredients for Egg Muffins

10 large egg Eggland's Best Egg
2 oz Butterball Bacon Style Turkey
3 medium (4-1/8" long) Onions, Spring Or Scallions
0.13 cup Milk, Nonfat, Fluid
2 oz 2% Milk Reduced Fat Mild Cheddar

Recipe Directions for Egg Muffins

  1. Preheat oven to 375.

  2. Line muffin tin w/ liners or spray with cooking spray.

  3. Chop turkey bacon and cook in a pan according to package. Meanwhile, whisk eggs, milk, chopped green onions and cheese together in large mixing bowl. Add chopped bacon to mixture.

  4. Pour mixture into muffin tin 3/4 full. Place in oven and bake 20 minutes.
