Portable egg breakfast, make in advance then bring to work and microwave for 30 seconds.

Recipe Ingredients for Egg Muffins

3 tbsp egg beaters - egg whites
1 tbsp green pepper
1 tbsp onion
1/2 oz turkey breast

Recipe Directions for Egg Muffins

  1. Fill muffin tin with egg whites.

  2. Add finely chopped green pepper, onion, shredded deli turkey, salt and pepper to each "muffin".

  3. Bake at 350 for 30-45 min.
