Egg Muffins Recipe

Little quiched like things made in a muffin tin.

Recipe Ingredients for Egg Muffins

9 eggs
6 ounces bacon
1/2 c mozzarella
1/2 c cheddar
1 c baby spinach
1/4 c red bell pepper
1/4 c white onion

Recipe Directions for Egg Muffins

  1. chop bacon and all veggies

  2. put paper cups in muffin tin and spray with nonstick, put meat in first then spinach then peppers and onions

  3. beat eggs with cheese and choice of seasoning, I use tabasco (5-6 drops, does not make them hot), salt and pepper.

  4. Pour egg mixture over veggies, fill cups not quite full.

  5. Bake at 350 for 20 minutes or until done, a toothpick with come out clean.
