Eggs baked in muffin tins without cheese

Recipe Ingredients for Egg Muffins

4 eggs
1 cup egg substitute
2 slices of whole wheat bread
1/4 cups mushrooms
1/4 cups of scallions
4 slices of turkey bacon

Recipe Directions for Egg Muffins

  1. process bread into breadcrumbs

  2. beat eggs, then add other ingredients

  3. pour into muffin tins prepared with cooking spray

  4. Bake at 350 for about 40 minutes until the top looks slightly browned. They're good frozen and reheated for an easy breakfast or lunch.
