Recipe Ingredients for Egg Muffins

10 large Egg, Whole
1/4 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 1/2 tbsp chopped Chives
3 1/2 oz Fully Cooked Lean Turkey Kielbasa
1/2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 serving 2% Milk Reduced Fat Mild Cheddar
1 tsp Salt, Table
1 tsp Pepper, Black

Recipe Directions for Egg Muffins

Preheat oven to 370. Line cupcake pan with paper liners and spray with pam cooking spray. Cut up 1/4 of Jenny-o turkey kielbasa into bit size pieces. De-sead tomato and dice with remaining veggies. Layer meat, veggies, and cheese in 12 cupcake pan until 3/4 way full. Whisk 10 eggs together with salt and pepper to taste. Pour egg mixture over cupcake pan and stir to throughly blend together. Bake for 30-40 minutes, until tops browned. Cool and store in fridge until ready to eat.
