Ground flax seed adds fiber. I eat 2 muffins as a serving.

Recipe Ingredients for Egg Muffins

9 egg whites
3 eggs
1 red pepper
1/2 cup spring onion, chopped
1 tablespoon basil
5 tablespoons flax seed

Recipe Directions for Egg Muffins

  1. preheat oven to 375F. Spray skillet with olive oil spray, cook quorn bacon then chop into little squares.

  2. I use a 6-silicon muffin pan for these.

  3. beat eggs together in a bowl. spray muffin pan with olive oil spray. evenly distribute the veggie mix into bottom of muffins, add basil & flax seed. then pour egg mixture until each muffin cup is 3/4 full. stir with a fork and bake for 25-30 minutes or until done.

  4. muffins will keep for a week in the fridge, also can freeze in separate zip loc baggies, then microwave for 2 minutes.
