spin on my original egg muffins. For a quick weekday breakfast, freeze "muffins" individually and heat in microwave for 30 sec to 1 min.

Recipe Ingredients for Egg Muffins Part 2

10 large Egg, Whole
2 medium (4-1/8" long) Onions, Spring Or Scallions
0.5 cup Sharp Cheddar Shredded Cheese
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 cup, pieces or slices Mushrooms
0.25 Teaspoon Baking Powder

Recipe Directions for Egg Muffins Part 2

lasyer veggies in bottom of muffin tine, add pinch of shredded cheese and 1/2 tsp bacon bits per muffin cup. Whisk eggs and bakings powder, pour into cups, until 3/4 full. Bake at 375 for 20 minutes. Makes 12, enjoy.
