Recipe Ingredients for Egg Muffins (6 servings x 99 CAL)

14 egg whites
4 whole eggs
1/2 tsp basil
1/4 tsp oregano
1 dash sea salt
1 dash pepper
4 cups broccoli

Recipe Directions for Egg Muffins (6 servings x 99 CAL)

  1. 1. Preheat oven to 375 degrees F.

  2. 2. Coat a 12-muffin tin with a small amount of olive oil or canola oil spray to prevent sticking.

  3. 3. Fill each muffin tin 2/3 full with your chopped vegetables.4. Whisk eggs and seasonings in a large bowl.

  4. 5. Pour egg mixture slowly into each muffin tin. Egg mixture should fill tin the rest of the way. (I find it easiest to put the egg mixture in a large measuring cup and pour.)

  5. 6. Bake for 30 minutes or until muffins have risen and are slightly browned.

  6. Makes 12 egg muffins.
