Recipe Ingredients for Egg muffin

2 cups egg substitute
1 whole egg
2 oz lean ham
2 tbs green or red pepper
1 tbs onion (white or green)
1 black pepper
1/4 c shredded low fat cheese

Recipe Directions for Egg muffin

  1. grease muffin tins with spray-type oil or use silicone type cups

  2. mix all ingredients together - amounts are approx, vary to suit your taste; should have about 3 cups total when combined

  3. pour into muffin tins

  4. bake at 350 F for 15-18 minutes

  5. keeps well in fridge, eat cold or microwave 10- 15 seconds to heat. Don't be alarmed - they will collapse when cooled, won't look as nice but taste is just as good.
