Breakfast muffin with eggs and vegetables

Recipe Ingredients for Egg muffin

1 english muffin, whole grain
1 egg, omega 3
1/2 cup tomatoes, cherry
2 cups spinach
1/2 cup mushrooms
1 tbsp olive oil

Recipe Directions for Egg muffin

  1. Toast muffin

  2. Add oil to saute pan (You can also use a spray

  3. Add tommatoes and mushrooms, saute a few minutes

  4. Add fesh spinach and a little water

  5. Add egg

  6. Close lid tightly

  7. Cook until egg is opaque and required consitency
