healthy(er) variation of the classic sponge cake mix

Recipe Ingredients for egg-less sponge

225 g Flour Wholemeal Self Raising
2 tsp baking powder
175 g caster sugar
6 tbsp sunflower oil
250 ml water
1 tsp vanilla extract

Recipe Directions for egg-less sponge

  1. Grease two 20cm sandwich cake tins or use cake cases

  2. sive flour and baking powder into a large bowl

  3. stir in caster sugar

  4. pour in sunflour oil, water and vanilla extract

  5. mix well with a wooden spoon for about one minute until the cake mixture is a smooth consistancy

  6. divide mixture between prepared tins/cases

  7. bake in a preheated oven (180C) for 25-30 mins

  8. leave to cool in tine before turning out onto a wire rack
