A new spin on the old classic egg in a hole recipe, using bell pepper in place of fried bread.

Recipe Ingredients for Egg in a Hole

1 large egg
1/4 red pepper
1 tsp black pepper
1 tsp parmesan cheese
1 slice honey wheat bread
1 tsp light olive oil

Recipe Directions for Egg in a Hole

  1. Rinse the bell pepper under cool water. Slice the top and bottom off, then remove the seeds and core. Slice the pepper into 4 rings. Save the extra rings for another use.

  2. Heat the oil in a small skillet over medium heat. Place the pepper ring in the oil, then crack an egg in the center of the ring.

  3. Season with pepper and parmesan cheese and cook 2-3 minutes, then flip and cook until done to your liking.

  4. Eat atop a piece of toasted honey wheat bread.
