Recipe Ingredients for Egg fried rice

4 oz frozen peas
11 3/4 oz brown rice, basmati
2 tablespoon vegetable oil
2 eggs, beaten
1 teaspoon salt
2 tablespoons spring onions, finely chopped

Recipe Directions for Egg fried rice

blanch the peas in a saucepan of boiling water for about 2 minutes, drain them with a colander. Heat the wok or large frying pan until it is hot, then add the oil and wait until it starts smoking, add the cooked rice and stir fry for 1 minute and then add the peas and salt, continue to stir fry the mixture for 5 minutes over a high heat. Next add the beaten eggs and continue to stir fry for 2 minutes or until the eggs have set. Turn the mixture onto a plate and garnish with spring onions, serve at once.
