Recipe Ingredients for Egg-Free Tomato Cake

1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon Cinnamon Powder
1/4 teaspoon salt
2/3 cup brown sugar
1 cup chopped tomatoes
2 tablespoons olive oil
5 tablespoons Plain Yogurt
3 tablespoons white vinegar

Recipe Directions for Egg-Free Tomato Cake

  1. Blanch the tomatoes, skin and de-seed. Chop them finely, drain.

  2. Mix all the dry ingredients in a bowl. In a separate bowl, mix all the wet ingredients well.

  3. Dry the wet into the dry ingredients. mix till combined. Spread evenly into 16x16 cm pan. Bake until a toothpick inserted comes out clean, about 25 to 30 minutes.
