If you don't have any eggs laying around or just don't like it, this is the recipe for you

Recipe Ingredients for Egg Free Sponge Cake

6 oz self-raising flour
1 tsp baking powder
2 1/2 oz margarine
2 oz sugar
1/4 pint 1% milk

Recipe Directions for Egg Free Sponge Cake

  1. Sift the flour and baking powder.

  2. Cream the margarine and sugar until soft and light

  3. Gradually add the flour and then a little liquid.

  4. Continue like this until you have a smooth mixture. Add a little extra milk if needed.

  5. Grease and flour two 7 inch sandwich tins and divide the mixture between the two.

  6. Bake on Gas Mark 2, 300F, 150c for about 1 hour in the centre of the oven.

  7. Check that the sponge is cooked by piercing with a skewer, leave a bit longer if necessary.

  8. When cooked switch off oven and leave the cake inside until cold (because the cake is egg free it will fall if taken out to cool).
