My son is allergic to eggs, so I've modified a recipe from "Bakin' Without Eggs" and use it to make all kinds of muffins. These I made with King Arthur White Whole Wheat flour, not standard whole wheat (not available on the food list).

Recipe Ingredients for Egg Free Raisin Brain Muffins

2 c Total Raisin Bran Cereal
1 1/2 c Whole Wheat Flour
1/2 c Sugar
1 tbs baking powder
1 1/2 tsp baking soda
1 tsp vanilla extract
2 c Milk, 1%
1 tbs Cider Vinegar
1/4 c Vegetable Oil

Recipe Directions for Egg Free Raisin Brain Muffins

  1. Preheat your oven to 350 (F), put muffin liners in your tins. This recipe can be stretched out to 18 smaller muffins if you like.

  2. Take the Raisin Bran and mix it in a small bowl with the Milk, let sit.

  3. Mix together all of the remaining dry ingredients in a large bowl.

  4. Into the raisin bran/milk mixture, mix the oil, vinegar and vanilla.

  5. Mix the wet and dry ingredients together and fill muffin cups 3/4 full (or less if you are making more muffins, of course). Bake for about 20-25 minutes, until the centers bounce back when you touch them lightly.
