Recipe Ingredients for Egg Foo Young

8 eggs
4 cups mushrooms
6 cups bean sprouts
1 cup green onions
6 tbsp soy sauce
1 tbsp oyster sauce
1/8 cup olive oil (for cooking)
1/3 cup flour

Recipe Directions for Egg Foo Young

  1. Prepare all vegetables beforehand: wash the bean sprouts, clean and chop the mushrooms, mince the green onion, etc. Combine these all together in a bowl. (Since this recipe calls for large amounts of everything, you will probably need two bowls. You can cut the amounts in half if you like.)

  2. In a separate bowl, beat eggs and add soy sauce/oyster sauce.

  3. Pour egg mixture over vegetables. Using a large spoon, mix until everything is lightly coated with egg, adding flour as you go along.

  4. Warm a moderate amount of oil in a large pan. Of course you want the egg to cook, but you don't want the eggs to burn; set the stove at about omelet temperature.

  5. When it's warm, place large spoonfuls (about 3" in diameter) of your soon-to-be egg foo young on the pan. Ladle a bit of extra egg batter on top. Let them cook on one side for about 5-7 minutes, then flip and wait for another 3-5 minutes.

  6. Your finished product: golden egg pancakes with vegetables on the bottom. Yum
