A very simple recipe found on CC and adjusted to my likes to create incredibly low-cal oatmeal cookies! Yum!

Recipe Ingredients for Egg & fat free oatmeal cookies, adjusted recipe

2 tbsp white sugar
200 g applesauce
40 g all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
240 g rolled oats

Recipe Directions for Egg & fat free oatmeal cookies, adjusted recipe

  1. Preheat oven to 180C, line a baking sheet with baking paper.

  2. In a bowl, mix applesauce with sugar; whisk flour with salt, cinnamon and baking powder and mix into the applesauce. Stir in the oatmeal.

  3. Use a teaspoon for placing batter onto the baking sheet and shape about 1.5 cm thick, round cookies (they will slightly rise when baked). Bake for about 15-20 minutes or until golden brown.
