Recipe Ingredients for Egg Drop Soup

4 cups broth or stock
2 eggs, lightly beaten
1 green onions, minced
1/4 tsp white pepper
1 Salt to taste
1/4 tsp sesame oil (optional)
4 cups chopped Chinese cabbage

Recipe Directions for Egg Drop Soup

  1. In a wok or saucepan, bring the broth to a boil. Add the white pepper and salt, and the sesame oil if using. Cook for about one more minute.

  2. Very slowly pour in the eggs in a steady stream. To make shreds, stir the egg rapidly in a clockwise direction for one minute. To make thin streams or ribbons, gently stir the eggs in a clockwise direction until they form.

  3. Stir in the cabbage and cook for one more minute. Garnish with green onions and serve
